Where can I make black and white stock footage with AI?

Why does my black and white shot look flat and grey?
The prompt removed colour without setting contrast. Colour was doing the separation, and taking it away leaves everything at a similar brightness. Name the brightest element and the darkest element in the frame and give the light a direction, and the image separates again without any grading.
Which subjects work best in monochrome?
Anything carried by texture, shape or a specular highlight: water, smoke, stone, fabric, weathered skin under raking light. The difficult case is two objects that differ only in hue while sitting at the same brightness, since they merge into one grey mass. Separate those with light or with distance rather than colour.
Can I use generated black and white footage commercially?

How is this different from running a colour clip through a black and white LUT?
